MARIO

HEAD CHEF

Lead Chef – over seeing all the dishes and menu, Mediterranean specialist 25 years experience, Family history of Restaurants in Hove (Fresco), started at Mama Mia on Preston street in the past when his family came to Brighton, Family history or pizzerias and fresh pasta. 

Mario makes all the pasta fresh in house to order, 

Also worked at the Meadow in Hove. Keen football player likes to swim and spending time with his children also Coaches Southwick Rangers under 11s Football team.

Recommendation – Ravioli Mari E Monti – “Try this and it will take you to another world”

ENRICO

DESSERT CHEF

Enrico has over 10 years experience in various restaurant roles.

Born into a family of chefs and restaurateurs in Italy, as a child he could be found in the kitchens experimenting. At E39 he is specialising in creating exquisite desserts. In his spare time he loves to relax by fishing and he is also a talented Basketball player who can be regularly be found on the sea front beach court.

Recommendation – Prime Local Cut T-Bone – Sourced locally

ENRICO

DESSERT CHEF

Enrico has over 10 years experience in various restaurant roles.

Born into a family of chefs and restaurateurs in Italy, as a child he could be found in the kitchens experimenting. At E39 he is specialising in creating exquisite desserts. In his spare time he loves to relax by fishing and he is also a talented Basketball player who can be regularly be found on the sea front beach court.

DIEGO

PIZZAIOLO & BREAD CHEF

3rd generation Napoli, was taught by his parents and grandparents in Napoli , Deigo makes all the pizza and fresh breads. He has a healthy history in other local pizzerias. All elements are made from scratch fresh every day,  

His pizza dough, has no fats or grease, has 28 hours to prove, and the yeast is cultivated for 3 months!

He is passionate about Napoli football team but a fan of all football. First also lived in London for a while before discovering Brighton.

Recommendation – Le Due Sicille Pizza
